Olivier Pithon has been involved with wine from a very early age. His Grandfather was a vine grower in Anjou and when Olivier was four, his big brother, the famed Jo Pithon, settled on the hillsides of Layon. After learning his craft in Bordeaux where he was taught "the sensitivity to how wines can become pleasure, balance and lightness", Olivier settled down in the village of Calce, where he met with Gerard Gauby. The success of this “foreigner” in Roussillon has become the symbol of this area as the wine new frontier.

With some other winemakers Olivier has shown us the greatness of whites from Roussillon. His top cuvee, la D18, sharp and profound, has become a legend in France. His new cuvee, simply called Macabeu, could be the best example of the unsuspected complexity that this grape can deliver. Olivier's wines are inspired. They achieve a balance between character and nature that has to be the envy of all wine makers. His goal is to make the wine as good as possible by getting as much out of the soil as he can, whilst respecting the environment and considering the problem of leaving to generations to come healthy soil.

The wine line-up is exceptional: We will taste all of Olivier’s top cuvees: D18, Macabeu and Pilou!!

As always a welcome drink will be served and an original full course dinner prepared by our chef TOMIYAMA-SAN will complement the wines.

Ah, Provence! The name conjures up visions of lavender, sunflowers, olive trees, and wine – lots of wine – white, red and, of course, rosé! 88% of the region’s production is Rosé!
This historic region sits along the Mediterranean coast of France, bordered by the Rhone River to the west and the Côte d’Azur on the east. Wine has been made here for over 2600 years, making Provence the oldest wine-producing region of France.

Provence is blessed with a fantastic climate, especially for grapes! The region gets lots of sunshine and not too much rain with warm days and cool evenings. The Mediterranean moderates the temperatures and the famous “Mistral” wind keeps the vineyards dry, free of pests and the skies clear. The region is well suited to organic viticulture. With many different soils, climate, altitude and historical influences, it only makes sense that Provence is home to many varieties of grapes. About 36 wine varieties are allowed in Provence: Rolle, ugni blanc, Clairette in white, Grenache, syrah, mourvedre and Cabernet Sauvignon.

4 iconic wines:

The famed Chateau Simone, which produces without any doubt the most complex white in Provence, comes from Palette, effectively an idiosyncratic one-property appellation just outside Aix.

Bellet is a cluster of vineyards hidden in the western hills of Nice. Clos St Vincent produces the finest wines that were served at the Monaco Royal Wedding.

The most famous appellation in Provence is Bandol, known principally for its characterful, warmly spicy oaked reds made predominantly from Mourvèdre. The reds are ripe and lush enough to be enjoyed in youth but the best also have the capacity for long ageing. Domaine Tempier is the best-known producer. La tourtine is its iconic cuvee.

The first plantings of Cabernet Sauvignon were brought to the Provencal vineyards of Georges Brunet (owner of Chateau La Lagune) just after World War II. It brings freshness, structure and elegance to the wines. One of the best examples of cabernet sauvignon-based wine comes from Chateau Revelette in les Coteaux d’Aix.
